Beef with Capers & Pecorino
Ingredients (serves 4 for an entree):
400 grams Scotch or Eye Fillet
Pecorino Cheese (or Parmesan)
Baby Coriander
¼ Red Onion
1 Small Tomato
1 Tbsp Capers
TVP Garlic Olive Oil
Salt & Pepper

400 grams Scotch or Eye Fillet

Method:
Season the beef with salt & pepper and a drizzle of TVP garlic oil. Sear in a hot skillet until medium rare (3-4 minutes each side). Set aside to rest for approximately 5 minutes. Finely slice tomato and red onion, and finely shave the pecorino/parmesan.
To Serve:
Assemble all together on individual plates, scatter over capers and coriander and finish with a drizzle of TVP garlic olive oil.
