Asparagus Feta & Tomato Salad
Ingredients (serves 4):
10 fresh Asparagus spears
100gms Goats or Cow Feta
4 Small Tomatoes
¼ cup Fresh Rocket
1 Tsp Salted Capers
1 Red Onion (sliced)
Fresh Italian Parsley & Chives
EVOO or Al Brown Orange & Chilli Oil
Black Pepper
Ingredients (serves 4):
10 fresh Asparagus spears

Method:
Cut the asparagus spears diagonally and blanch in a pot until just cooked. Finely slice the red onion and cube the tomatoes.
To Serve:
Using a layering method, assemble the asparagus, tomatoes, cubed feta, red onion and capers. Add ripped parsley and chives and a good drizzle of olive oil. Finish with a good grind of black pepper.
