Kingfish Carpaccio

Ingredients (serves 4):
200gms Kingfish finely sliced/sashimi
1 Tbsp Village Press EVOO
1 Spring Onion
1 Tbsp Fresh Coriander
1 Tspn Fresh Mint
1 Small Tomato
2 Tsp Jonathan's Spices Thai Lime Chilli Sauce

Ingredients (serves 4):
200gms Kingfish finely sliced/sashimi
1 Tbsp Village Press EVOO
1 Spring Onion
1 Tbsp Fresh Coriander
1 Tspn Fresh Mint
1 Small Tomato
2 Tsp Jonathan's Spices Thai Lime Chilli Sauce

Method:
Finely slice (sashimi) the fish and lay out on individual plates or one large platter. Finely chop the spring onion and tomato (de-seed the tomato & rip the coriander leaves and mint rather than chop).

To Serve:
When ready to serve, garnish the fish with all of the fresh ingredients and drizzle with Village Press EVOO and JS Thai Lime Chilli Sauce.

Note: Can use fresh snapper, tuna or trevally as an alternative to the kingfish.
