Chilli Ginger Raw Beef Salad

Ingredients (serves 4):
300gms Eye or Scotch Fillet (approx)
1 Fresh Chilli
10 Fresh Beans
4 Tbsp Fresh Ginger (sliced)
1 Tsp Soya Sauce
1 Tsp Oyster Sauce
1 Splash Sesame Oil
1 Tbsp Olive Oil
2 Limes
Black Pepper
1 Fresh bunch of Corainder
1 Packet of Mung Beans
Fresh Thai Basil and/or Fresh Mint

Ingredients (serves 4):
300gms Eye or Scotch Fillet (approx)
1 Fresh Chilli
10 Fresh Beans
4 Tbsp Fresh Ginger (sliced)
1 Tsp Soya Sauce
1 Tsp Oyster Sauce
1 Splash Sesame Oil
1 Tbsp Olive Oil
2 Limes
Black Pepper
1 Fresh bunch of Corainder
1 Packet of Mung Beans
Fresh Thai Basil and/or Fresh Mint

Method:
Finely slice eye fillet into long strips. Add ginger, chillies, sesame oil and juice of 1 lime. Marinate meat for 20 minutes. Slice and blanch the beans.

To Make Dipping Sauce:
Mix together the Soya Sauce, Oyster sauce, Olive Oil, ½ Tsp ground black pepper and the juice of 1 lime, and set aside.

To Serve:
Place a small handful of the marinated raw beef on each plate, top with some sliced blanched beans. Serve with a platter of the coriander, mung beans and thai basil and dipping sauce on the side. Note: if not keen on raw beef, you can flash fry the beef for 30 seconds in a hot wok and serve rest of recipe the same.
